A vintage tea room in Carlton hopes to become Nottingham’s first green restaurant and cookery school.
Family-run Dolly’s wants to use renewable energy, locally sourced foods, and by giving back to the community.
Owner Jess Limbrick said: ” As a growing business we wanted to implement something current that is going to benefit the community.
“As well as installing solar panels and using solar panelled water, we are looking to employ staff who are currently unemployed or have been struggling to get back into work.”
Renovations to the building have already started but the business will need to raise £1,500 in order to finance the installation of new solar panels, and to go towards new kitchens for a community cooking school.
Jess said: “The premises are so big so we want to use them to their full potential by having individual classrooms to hold cooking workshops for the community.”
Other changes made to the restaurant will include installing an eco air conditioning system and recycling every element of the restaurant’s waste.
Waste that has been composted will be given to local allotments, and food waste that is in date will be given to Nottingham food banks.
A crowd funding page has been set up to get the plan off the ground.
